"Here at LC Double Reeds it has been our most recent project to develop a high quality sharpening stone which works well for our knives, with better performance than stones that big box stores offer, and without the expensive price tag associated with many of the premium brands on the market. Through directly working with stone manufacturers and testing numerous types of stones that are widely available on the market, we feel as though we have really succeeded in our goals of creating a quality sharpening stone that works well with our knives, outperforms similarly priced stones on the market, and is price accessible to everyone. In the interest of accessibility, we have taken the two-sided stone approach so that you don’t need two separate stones for regrinding the edge of your knife and bringing it to a smooth, fine edge.

It is our recommendation that the 600/1500 stone be used for our Double Hollow Ground knife, and the 1000/2000 stone be used for our Beveled knife. The stones can be used interchangeably with the knives, but this recommendation is where we have found the most optimal results."

DIRECTIONS FOR USE: Our sharpening stones are water stones, not “splash-and-go” stones or oil stones, and should be prepped accordingly prior to use for best results. We recommend soaking the stone for several minutes prior to use (fully submerged in water, if possible) to allow the porous nature of the stones to fully bloom. The length of soaking time necessary for optimum sharpening can vary depending on the hardness of your water, but approximately 5 minutes should be sufficient under normal circumstances. When in doubt, it is typically better to over-soak than under-soak. We also rinsing your stone after use to prevent clogging of the stone and to ensure consistent performance.

CLEANING INSTRUCTIONS: Always rinse your stone with water after use and wipe the stone with a damp washcloth if necessary to remove any standing particles which could clog the stone's pores and contribute to inconsistent performance. Under normal circumstances, doing this regularly should be the only necessary maintenance. Some discoloration of the stone after sharpening is typical and completely normal. For a more thorough cleaning, we recommend soaking the stone and then using a Sabitoru Rust Eraser to help the stone release trapped particles in clogged pores.
